100th Anniversary Commemorative Knife – “瑞雲” (Zuiun)

The 100th Anniversary Commemorative Knife “瑞雲” (Zuiun) was developed in tribute to the founder and first-generation director, Mr. Kawamura Shojiro, a descendant of the renowned swordsmith Kanejitsu. Rooted in the philosophy of constantly striving to craft blades that are “unbreakable, unbending, and razor-sharp” — a hallmark of traditional Japanese swords from the Seki region — this knife represents the pinnacle of product evolution.

“Zuiun” is designed in the traditional Japanese style, embodying the spirit of a katana with its exceptional sharpness and refined form.

Multi-purpose Specialty Knife

The special-edition knife “瑞雲” (Zuiun) combines the best features of both the Usuba (thin vegetable knife) and the Yanagiba (sashimi knife). Unlike traditional Japanese single-bevel knives, Zuiun features a double-bevel edge, allowing for straight, precise cuts across a wide range of ingredients — from meats and vegetables to sashimi.

The sword-like tip is specially designed for intricate work and decorative plating, making it an ideal choice for chefs who require both versatility and precision.

Premium SPG2 Damascus Steel

The blade is crafted from 63-layer Damascus steel with a core of SPG2 (Super Gold 2) — a top-grade powdered stainless steel highly regarded both in Japan and internationally, yet notoriously rare.

SPG2 excels across all four essential qualities of a superior kitchen knife:
• Exceptional hardness
• Outstanding durability
• Superior wear resistance
• Excellent corrosion resistance

Hamaguri Blade – Inspired by Japanese Swords

The blade features a hamaguri (clam shell) grind, a traditional Japanese sword-style curvature. This design delivers exceptional sharpness, maintains its edge longer, and makes resharpening easier and more efficient over time.

Sub-Zero Treatment Technology

The knife undergoes a special Sub-Zero heat treatment, cooled to temperatures below -70°C after hardening. This process significantly enhances the blade’s hardness and durability, aligning with the core values of Japanese sword-making: unbreakable, unbending, and razor-sharp.

Elegant Design in Authentic Japanese Style

The handle is crafted from special heptagonal Pakka wood, offering a comfortable grip while reflecting the essence of traditional Japanese aesthetics. Decorative accents are thoughtfully placed for visibility, giving the knife a refined and stylish appearance.

Each knife comes in a premium Paulownia wood box, with an optional protective sheath. The name “瑞雲” (Zuiun) means “auspicious clouds” in Buddhism, symbolizing good fortune—making it an ideal high-end gift.

Custom Wooden Sheath for Zuiun Knife

The dedicated wooden sheath for the special-edition Zuiun knife is crafted to fit its dimensions precisely. Coated in a black lacquer with a stone-like pattern, it exudes a sense of elegance and sophistication. This sheath ensures both safety and convenience for everyday storage or while carrying the knife.
