Each Saiun (彩雲) blade is crafted from 32 layers of stainless steel, carefully forged and polished to reveal the distinctive Damascus pattern-flowing like gentle waves, mesmerizing like sunlight breaking through the clouds. This is not merely a kitchen tool, but a true work of art that embodies the spirit of Japanese craftsmanship.


 

VG10 Steel Core

The VG-10 core is a premium stainless steel containing cobalt, with a hardness of 60–61 HRC. It is renowned for its long-lasting edge retention, excellent wear resistance, and strong durability. The 32-layer construction surrounding the core gives the blade both strength and flexibility—meeting the rigorous demands of professional chefs.


Hamaguri Blade – Inspired by the Japanese Sword

Saiun (彩雲) is sharpened in the traditional Hamaguri-ba style—a clam-shaped, gently convex edge inspired by Japanese swords. This design delivers a smooth, decisive cutting experience while making the blade easier to resharpen over time.


Sub-Zero Heat Treatment

 

Each Saiun (彩雲) knife undergoes a rigorous forging process followed by deep cryogenic treatment at temperatures below -70°C (Sub-Zero). This enhances the blade's hardness and durability while reducing the risk of warping, chipping, or breaking during use.


Micarta Handle

 

Micarta is a composite material made from resin and linen fibers compressed under high pressure. It resists deformation from heat or humidity, offering a secure, smooth, and comfortable grip—along with exceptional durability.


Seamless Design
