The Kiritsuke knife is one of the few traditional multi-purpose Japanese blades, and it can be used as both a slicing knife and a vegetable cutter. These sword-shaped knives have straighter and wider edges compared to the Yanagi, which is used for slicing vegetables, and longer blades than the Usuba, making it easier to slice fish. Traditionally in Japan, these knives were used only by chefs as a symbol of status.
