- The Motokane series is forged by one of the most skilled knife makers in Tosa. The blade uses the highest quality steel from Hitachi Yasugi, called Aogami Super. It has a dense grain structure created through fire forging by hammering and stretching thick steel (hand hammer forging). Moreover, through a special heat treatment process, these kitchen knives maximize the unique properties of Aogami Super steel.
- The Motokane Nakiri has a wider blade compared to typical Nakiri knives but remains quite light, extremely hard, and exceptionally sharp. It is ideal as a dedicated vegetable knife, perfect for chopping, slicing, and julienning. Despite its larger size, its light weight makes it easy to carry without inconvenience.

Notes

- This kitchen knife is entirely handmade, from forging to sharpening. Due to the production process, the blade may have minor scratches or slight peeling of the oxide layer (which is insignificant).
- As each knife is freely forged, slight variations in size and uneven blade deformation may occur.
- It is not suitable for use in dishwashers or dryers. Also, as a steel knife, it may rust if not properly maintained.
- The Aogami Super blade is very hard and more difficult to sharpen than regular knives.
